W ir started the barbecue season at Easter: three evenings of glowing coals galore and this frolic was in seventh heaven. In addition, there was an exciting citrus-carrot salad, which is a really great alternative to mayonnaise with mayonnaise or unruly leafy lettuce. The hit: You can also prepare it on the grill (if you have a big barbecue). Unfortunately, this does not work on my little pink BBQ Knutschkugel, so I prepared the salad inside on the stove, while the man outside guarded the grill.

And here comes the recipe for 3-4 servings of citrus carrots with dates and cut into thumb-sized pens. Blanch the carrots in boiling salted water for about 4 minutes, drain and fry. Drain well.

1-2 red onions peel and cut into strips. 1-2 garlic cloves peel and finely chop. Cut 8 dried soft dates into fine slices. Keep 1/2 Bundle of Smooth Parsley , shake dry and cut roughly. Finely grate the skin of 1 untreated lemon .

Place a cookware suitable for grill (made of enamel or an aluminum dish without holes) on the grill and 1 tablespoon of garlic butter to melt in it. People without a large grill surface simply heat a larger pan on the stove.

Add the carrots to the butter with the onions, garlic and lemon peel, stir well and grill or fry for about 8 minutes. Deglaze with 6 tablespoons fresh orange juice . Then add the dates, parsley, salt and pepper and strong cubes of ground cumin, sauté well and fry for another 2 minutes. Finally, season with salt and pepper and serve lukewarm.

Tip: The citrus carrots also taste great cold as antipasti and as an office lunch with bread or green salad.
